
About the Recipe
Easy soup to prepare and definitely a crowd pleaser. Serve with crunchy tortilla chips!
Ingredients
2 lbs ground meat
1/2 cup onion diced
1 pkg of taco seasoning (1 oz)
1 can chili beans (hot or mild and do not drain)
1 can pinto beans rinsed and drained
1 cup frozen corn kernels
2 cans mild rotel tomatoes (10 oz cans)
1 pkg ranch dressing mix (1 oz)
1 and 1/2 cans of water
Garnish:
shredded cheese
sour cream
tortilla chips
Directions
In a large pot, add olive oil and saute onion until soft about 4 to 5 minutes
Remove onion from pot and add ground meat
Use spoon to break up ground meat into small pieces
Brown ground meat in pot until no longer pink.
Drain grease from meat and return to pot
Add sauteed onion into the pot
Add in the taco seasoning and mix well.
Stir in the remaining ingredients.
Bring to a boil then reduce to a simmer and simmer uncovered for 15 to 20 minutes.
Serve with suggest garnishes and enjoy!
