About the Recipe

This is my go to for an easy way to make delicious taco meat. Perfect for "taco tuesday" or anytime your family wants to enjoy delicious crunchy or soft tacos! I found the recipe on Myheartbeets.com and made some minor modifications to it. If you want the original recipe, check out the link provided.

Ingredients

2 lbs ground beef (or ground meat of choice)

2 tbsp olive oil

1 yellow onion diced

2 bell peppers (any color) diced

3 cloves of garlic minced

2 tsp chili powder

2 tsp oregano

1 tsp kosher salt

1 tsp dried basil

1/2 tsp tumeric

1 tsp black pepper

1 tsp smoked paprika

1/2 tsp cumin

1/2 tsp cayenne

1/2 tsp chipotle powder

1/4 cup chopped Cilanto (opptional)

Directions

Combine the dry seasonings in a bowl and whisk to blend.  Set aside.

Press saute on the Instant Pot and add the olive oil

When the oil is hot, add the onion, bell pepper and garlic and saute until soft, about 4 to 5 minutes

Remove the veggies from the pot and add the ground meat

Break up the beef with spoon into small pieces and cook until no longer pink

Turn off saute function on Instant Pot

Stir bottom of Instant Pot to remove any browned bits (prevents a burn alarm on Instant Pot)

Add sauteed veggies back to the Instant Pot

Add in the seasonings and stir well

Secure the lid, turn the pressure valve to closed position and set the Instant Pot to pressure cook on high for 12 minutes

When finished, let pressure release naturally for about 10 minutes

Open the lid and stir the meat

If there is more liquid than desired, set the Instant Pot to saute and boil it off

Garnish meat with cilantro if desired

Spoon into crunchy or soft taco shells, top with cheese, lettuce, tomatoes and any other fixings your family loves!  Enjoy!
